1-1/2 lb ground turkey or beef
1/2c. chicken stock/broth
1c. shredded cheddar cheese
1/4c. chopped onion
10 oz. can Cream of Chicken soup
(for those not avoiding grains- mix 3T melted butter with 1-1/2c. crushed Club or similar type crackers for topping)
Preheat oven to 350
Brown meat in skillet with onion. If not using frozen broccoli, steam broccoli till crisp/tender. When meat is fully cooked, add chicken broth and cream of chicken soup. Combine all ingredients in 8×11 casserole dish, saving some cheese to sprinkle on top (if not using the cracker topping.) Cook 25-30 minutes, serve.
When I made this, it tasted like it needed a little more flavor. Maybe 2t. dried minced basil and 1t. minced garlic for next time.
